Invited by academician A. N. Nesmeyanov Prof. Golovnya had organized the laboratory of flavor and taste in 1975. She had carried out the fundamental research on the analysis of natural volatile organic compounds, resulting in new methodology of organoleptic and chromatographic analysis of flavor components. She had studied the main factors of flavor formation and had synthesized artificial flavoring agents. In 1991 Prof. Golovnya became the head of the laboratory of flavor chemistry in the Institute of food compounds.
